January 22, 2026:  The New England Research Chefs Association invites you to Tapped In: Maple Farming 101, featuring Jacob Powsner, co owner of Baird Farm. This session will explore the full journey of maple syrup production in Vermont, from collecting sap to producing syrup at a commercial scale. Jacob will also share insights into the history of sugaring, organic maple certification, and the realities of running a fourth generation family farm with more than 15,000 taps.
